Hummingbird Cake

I'm finally posting about the cake I made my Mom on her birthday back in July.




The birthday girl!


Hummingbird Cake

3 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 eggs, beaten
1 1/2 cups vegetable oil
1 1/2 teaspoons vanilla extract
1 (8 oz) can crushed pineapple (undrained)
2 cups chopped walnuts (divided)
2 cups chopped bananas
Cream Cheese Icing (see below)

Combine dry ingredients in large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup walnuts, and bananas. Spoon batter into 3 well-greased and floured 9-inch cake pans, or one large oblong pan. Bake at 350 degrees for 30 minutes or until cake is done. Let cool completely. Spread Cream Cheese Icing over cooled cake and sprinkle with remaining 1 cup walnuts.

Cream Cheese Icing

1 (8 oz) package cream cheese, softened
1/2 cup butter, softened
1 (16 oz) box powdered sugar
1 1/2 teaspoons vanilla extract

Combine cream cheese and butter; cream until smooth. Add powdered sugar and vanilla; beat until light and fluffy.


This cake is amazingly delicious!! I was very tempted to make myself one because its just that good. There are a few things I did differently than the recipe. I used self-rising flour instead of all-purpose. That way I didn't have to to use salt or baking soda. I also left out the walnuts. This was my second time making the cake and I chose to use store bought frosting this time around. The first time I made it I tried the Cream Cheese frosting recipe. It was very tasty but it basically dripped all over the cake. It wasn't thick at all. That's why I bought frosting instead. As you can tell by the pictures I only used 2 pans instead of 3. I think I prefer it being a 2 layer cake. The first time I made it I did 3 layers, but they were so thin. I believe its easier doing 2 layers. If you decide to make it...ENJOY!!

I seriously may have to make another one! Hmmm maybe I'll do cupcakes. :) I could probably eat a whole cake right now.

  2. this is my mother's favorite cake. We put crushed nuts (pecans or walnuts) on the outside as well.

  3. hummingbird cake is one of my favorites and my daughter doesn't like to make it for me but cuz she loves me she has - it's a lot of work so "kudos" for making it for your mom.
